Tomato Rigatoni |
This light pasta is deliciously simple and a cinch to make—just four main ingredients!
Ingredients (serve 4):
- 1 (300-gram) pack rigatoni
- 500 grams ripe tomatoes
- 1 large onion
- 1 cup tomato sauce
- water
- 1/2 cup fresh basil, chiffonade
- Parmesan cheese and extra basil, to garnish
- Grilled vegetables like eggplant, zucchini and red bell pepper (optional)
Preparation:
1. Cook rigatoni according to package directions; set aside.
2. Puree tomatoes with 1 large onion.
3. Simmer the pureed mixture with tomato sauce for about 10 minutes. Add water to prevent it from drying out. Season as needed. Add fresh basil; turn off the heat. Toss in cooked rigatoni.
4. Sprinkle with Parmesan cheese and basil to serve. You may also add strips of grilled vegetables to the dish for a deeper flavor and sweetness.
