Chorizo and Shiitake Mushroom Penne |
Everyone loves a good pasta dish, which means any good party must have it on the menu. A tomato based pasta dish, whipped this up. The pasta and sauce separately, and tossed the two together as soon as all the guests arrived.

Ingredients (serves 5):
- 450 grams penne pasta, cooked al dente
- 1 piece chorizo Pamplona, sliced thinly
- 3 tablespoons canola oil
- 1 1/2 tablespoons minced garlic
- 2/3 cup chopped onions
- 2/3 cup grated carrots
- 350 grams ground beef
- 150 grams ground pork
- 3 tablespoons tomato paste
- 1 1/2 cups tomato sauce
- 3 cups water
- 4 dried shiitake mushrooms, rehydrated and finely diced
Preparation:
1. In a deep casserole, cook chorizo until fat is rendered. Remove chorizo slices and set aside. Add oil and sauté garlic until light brown.
2. Add onions and cook until translucent. Add carrots and cook for 2 to 3 minutes. Then add the ground meats and cook for some time until they render fat.
3. Add the tomato paste, tomato sauce, and water. Boil until meats are tender and sauce is reduced, around 40 to 50 minutes. Add the shiitake mushrooms. Allow to boil and adjust seasoning to taste.
4. Toss pasta with sauce and serve hot.
