Penne Al Telefono

This never fails to get a two-thumbs-up, whether from kids or adults.

Preparation Time: 20 minutes
Cooking Time: 25 minutes

Ingredients (serves 2-3):
  • 6 liters of water with 2 to 3 handfuls of coarse salt
  • 300 grams penneextra virgin olive oil for sautéing
  • 1 1/2 cup blanched and seeded tomatoes
  • 2 cups cream
  • salt and pepper to season
  • 160 grams cubed mozzarella cheese, cubed
  • 10 grams chopped fresh basil
  • freshly grated Parmesan cheese for topping

Directions:

In a large pot, bring water with salt to a boil. Add penne and cook until al dente. When the pasta is done, drain, leaving some pasta water. Set aside.

In a heavy saucepan, warm extra virgin olive oil and sauté seeded tomatoes. Add cream and season with salt and pepper. Add in pasta then lower heat to medium flame and add mozzarella cheese and basil. Transfer to a serving platter and finish with Parmesan cheese.
