Sardines and Shiitake Mushroom Whole Wheat Pasta

Whole wheat pasta is a healthy alternative to regular pasta, but it has a very different texture and taste from the white pasta we commonly use so when cooking make sure it is fully cooked through by tasting and biting it. Don’t rely on the boiling time on the package direction.

Prep Time: 20 minutes   
Cooking Time: 30 minutes 

Ingredients (serves 3 to 4):

  • 3 pieces dried shiitake mushrooms
  • 1 cup hot water 
  • 1 bottle Spanish sardines in olive oil, flaked and boned
  • 2 tablespoons minced garlic
  • 1 piece red bell pepper, sliced
  • 1/4 cup extra virgin olive oil
  • 2 pieces native tomatoes, sliced
  • 300-350 grams whole wheat spaghetti, al dente

Preparation:

1. Rehydrate dried shiitake in hot water. Slice. Reserve mushroom water.

2. Sauté minced garlic in olive oil. Add shiitake mushrooms and some water and cook.

3. Add sardines, and then toss in red bell pepper and fresh tomatoes.

4. Toss in whole wheat pasta. Serve immediately.
