Shrimp Primavera

All the get-fit ingredients in one decadent bowl, how can you not love this?
 
Prep Time: 10 minutes  
Cooking Time: 20 minutes (including pasta)

Ingredients (serves 4 to 6):
  • 1 1/2 cups whole-wheat fusilli, uncooked
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup fat-free Italian Dressing
  • 400 grams peeled shrimp (about 2 cups)
  • 1 cup matchstick carrots
  • 1 cup sugar peas
  • 1 red bell pepper, chopped\
  • grated Parmesan
  • salt and pepper to taste

Preparation: 

1.  Cook pasta according to package directions.

2.  In a pan on medium heat, sauté garlic in olive oil until light brown. Pour in Italian dressing and simmer for 3 minutes. 

3.  Add the shrimp, carrots, sugar peas, and bell pepper. Cook and stir for about 4 minutes or until shrimp are pink and the vegetables are still a bit crunchy.

4.  Drain pasta; toss with the sauce. Season with salt and pepper.

5.  To serve, top with grated Parmesan.
