Penne Pasta with Lemon Zest and Cream Cheese |
The American lemon is perhaps the most versatile of the citrus family. It can be used in both sweet and savory applications, and can be used fresh, cooked, or preserved. The best thing? It is readily available and reasonably priced. This pasta can be served alone or as a side to grilled chicken or pork chops.
Cooking Time: 15 minutes
Ingredients (serves 4):
- 400 grams penne pasta
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon rind,shredded
- 2 cloves of garlic, crushed
- 1/4 teaspoon dried chili flakes
- 3 tablespoons lime juice
- 200 grams cream cheese, at room temperature
- salt and pepper to taste
1. Place the penne in a large saucepan with rapidly boiling salted water and cook until al dente. Drain.
2. While the pasta is cooking, heat olive oil in a pan and add all ingredients, except the cream cheese; cook until fragrant. Set aside.
3. Whip the cream cheese until light. Fold cheese mixture into the penne and serve right away.
